Which Grinder Is Salt and Which Is Pepper? How to Tell

Three ten-second checks to tell the salt grinder from the pepper grinder — marks, windows, and what is inside — plus what to do if they got mixed up.

The fastest answer: look for the mark, then look inside. Most matched sets carry an S and a P — on Haomacro mills the letters sit at the top and bottom of each body — and if there is no mark, the contents settle it: white crystals are salt, dark wrinkled corns are pepper. Everything below is the long version, including the one case where the two mills genuinely differ.

The ten-second checks, in order

  1. Find the letter. Check the top knob, the base, and the body for an engraved or printed S / P. Matched sets almost always have one.
  2. Look through the window. Sets with an acrylic window — like the Haomacro classic 6.5″ — make it a non-question: you see the salt or the peppercorns directly.
  3. Open the top. No mark, no window? Unscrew the top nut and look into the chamber. One glance beats every convention.

Do salt and pepper mills actually differ inside?

Sometimes — and this is the part worth knowing before you fill anything.

  • In matched ceramic sets (all the sets we cover), the two mills are mechanically identical. Ceramic grinds both salt and pepper safely, so the S and P are labels of habit, not hardware.
  • In traditional single mills, they can differ: classic pepper mills often use hardened steel burrs, and steel is exactly what dry sea salt corrodes. That is why dedicated salt mills historically switched to ceramic — and why you should never pour salt into an unmarked vintage mill without checking the core first. Why keeping the assignment matters (even with identical mills)

Two reasons, both practical:

  • Scent transfer. Peppercorn oils linger in the chamber and on the rotor. Swap the mills later and your salt will carry a faint pepper edge for weeks.
  • Muscle memory. The table works when the same hand finds the same mill every time. Marks, window, or a color difference (some sets stain one mill darker, like Haomacro’s brown/beige pair) all serve the same purpose: no thinking mid-meal.

Got them mixed up? Reset in two minutes

  1. Empty both mills completely.
  2. Grind a spoonful of plain white rice through the mill that held the wrong seasoning — the classic trick that clears residue and absorbs oils.

Frequently asked questions

No reliable one — table conventions vary by country and household. Trust the S/P marks, the window, or a look inside the chamber instead of etiquette folklore.

Only if the core is ceramic. Steel-burr pepper mills corrode around dry sea salt; ceramic-core mills handle both. When in doubt, check the material at the base of the mechanism.

The mills were swapped at some point and the chamber kept the peppercorn oils. Empty the mill, grind a spoonful of dry white rice through it, wipe, and refill with salt.

Most cooks grind pepper far more often than salt. If you buy mills individually, give pepper the larger or more comfortable one; matched sets solve it with identical bodies.
